Because Easter is a religious holiday, and Yahoo does not wish to emphasize any one religion. Its users come from all over the world, and believe in all sorts of different religions (and many have no religion). To include the non-specific themes of eggs and bunnies and baby animals might have been understood as merely "spring break" symbols, in the same way that the skating gingerbread boy and belly-flopping penguin represented winter holiday symbols. But they took the cautious route of staying away from the whole issue.
