I've tried to harvest the same stuff in my back yard..... but mine just comes out green and soft. Suggestions?

That stuff only grows in certain American Football stadiums. All the grass grown in these spots from January to April goes to the Easter Bunny, and from may to July it goes to Hula skirts.

Plastic grass is a petroleum-based product. I have a feeling that you're not oiling your lawn enough.
