This is already being done, it is called Geothermal Power. The process is to take steam from geysers (that are powered by volcanoes) and convert it to electricity by running it through turbines. Sorry, but the amount of energy taken from a volcano is so small compared to the total energy in a volcano that it won't stop it from erupting. People might drill down into the volcano and pump water to produce more steam, but that runs the risk of providing another conduit for an eruption.

While they don't get electricity from volcanic eruptions (it would be way too dangerous and you wolud probalby loose you equipment VERY quickly), you do get electricity from geothermal sourses, which are associated with volcanic regions. People tap into the steam, which is used for heating as well as to run turbines to produce electricty. Places i know that use this are Iceland and Rotorua (New Zealand)

I am guessing the extreme heat would melt all the components needed to harness the energy.. and spending the money on expensive materials that might work would cost more than the potential benefit can justify.
