Make your patties about a 1/2" thick. Place them between waxed paper sheets, wrap them in plastic wrap and freeze them. Take them out of the freezer and place them in the fridge, the night before you want to cook them.

This is my own recipe, it was a best seller at a restaurant in the Philippines where i worked as sous chef before.

ground beef
gound bacon
ground lamb(preferably with fat)
worcestershire sauce
paprika bilbao
liquid smoke
onion powder
onions(finely chopped)
carrots(finely chopped)
celery(fine chopped)
accord powder
ground oregano
salt, pepper

Mix everything together, portion them into whatever size and weight you desire, wrap each patty inbetween parchment paper and wrap individually in sandwich bags. store them in a freezer. just make sure your hands are clean when you work on this and of course use clean equipment in handling your raw food items. you could omit the onions, celery and carrots if you want to because they may be factors for spoilage, but my patties kept for two weeks in the freezer.
