It depends on the car.
You cannot take more people than the car was built to carry.
On any modern car that is the number of seatbelts fitted - but it will also be listed on the registration document.
For most saloon cars it will be driver plus 4 passengers (one front passenger, three rear passengers), but some are designed without a central rear seating position.

Some saloon cars seat 5, others only 4 including the driver.

a normal 4 or door saloon will carry 5 adults(normally) , but some are made to carry 7, while others will only carry 4 or even 2 . depends on make and model realy , if you still don't know see how many seat belts it's got . that's usually the easy way to tell.

In Australia and any other country where seat belts are compulsory the number of passengers is governed by the number of seat belts fitted.
If you don't wear seat belts then the more the better. Some will absorb the impact of a collision and save some of the luckier ones from injury.(Only joking.)

If in the UK, it depends on the number of seat belts as this will be what your insurance company will base its "passenger occupancy" on.

Travel with more passengers than stated on your insurance and you are in breach of your contract. Then have a crash and it is at your own expense or worse.....

The best way to find out is look at the registration document. On there it tells you what the capacity is and this should not be exceeded.
