Well, the traditional phrase used by the person with the sword is "I dub thee, Sir !" So, the new knight is "Dubbed"
The ceremony is (generally) called a Knighting.

Incidentally, the process generally involved the celebrant (in the British Commonwealth, we are talking about the Queen or King) gently strikes (or taps) both shoulders of the participant (the soon to be knight) with the flat of a sword.
Once the Knighting is complete, the celebrant palces the sword tip to the ground and bids the participant to "Rise Sir ."

The dubbing of a knight is a ritual beheading. It is an acknowledgement (bestowing of an accolade) of one who would lay his neck on the line for Crown and Country. This is why one shoulder is struck with the sword, then the other. The sword has been passed over both sides of the neck. In this manner, the sword has been ritually passed through the neck to signify his loyalty.
