An ordinary household oven has a hysteresis of about 20F degrees. Normally this means it overshoots about 10F degrees and then shuts down and cools to about 10F under the set point. The problem in stating this is that the control is in one place, the heater in another and the temp inside the oven may vary 50F inside. One advantage of a convection oven is that the heat is moved around and the sensor is more likely to match the average temp.

Depends on several factors, hon. First, most ovens will slightly overshoot the set temperature. Next, the amount of insulation will govern the rate at which heat is lost. Finally, the set point for the oven going on may be different.
