easter is celebrated on Sunday because Jesus rose from the dead on a Sunday, three days after his death on Good Friday. The date Easter is on depends on Passover, since the Last Supper between Jesus and his deciples was a passover meal.
In the western world, Easter falls between March 22 to April 25 and occurs on after the first ecclesiastical full moon. easter also marks the end of Lent in the Catholic church.
Thanksgiving is always on the fourth thursday of november ever since George Washington declared it in 1789.
Christmas is alwasy celebrated on the 25th, no matter the day of the week because that is approximently the day Jesus was born. But no one knows for sure the exact day he was born though.
Your birthday will always be a different day. If it was on a tuesday this year, then next yar it will be on a Wendsday unless it is leap year. In that case it will be two days after your last years birthday.

The Fourth Gospel places the date of the Crucifixion at 14 Nisan, the 3 Synoptics put it at 15 Nisan, after Jesus presides over Seder, The Last Supper. Wasn't 14 Nisan yesterday? Yep, 14 Nisan was yesterday, today is 15 Nisan until sunset.

Different rules govern different holidays. Thanksgiving was set aside by the American Government as a time of rememberance, and by law was set as the last Thursday in November. This holiday may, or may not, exist in other countries. I doubt it, but don't actually know.
True "holy days", the origin of our term "holiday", are set by whatever religion generates them. Judaism has several holidays and religious seasons, and they are governed by the seasonal calendar. The most important holiday season to the Jews is Passover: a week-long celebration of the deliverance of their nation from slavery nearly 6,000 years ago.
Jesus Christ, a Jewish Prophet from Nazareth in Galilee, was in Jerusalem for the Passover, circa 30 AD. The High Priests, jealous of His extreme popularity with the masses, staged a kangaroo court "trial", and handed Him over to the occupying Roman forces for execution.
He was crucified. The day of His crucifixion is commonly called either Maundy Thursday or Good Friday. After His torture (at the hands of professionals, mind you) and death, Jesus was given a quick burial in a nearby garden cemetary.
Early in the morning, on the first day of the week (what we call Sunday), Jesus Christ disappeared from His borrowed grave. He was soon seen alive by over 500 of His followers.
Easter Sunday is our official rememberance of the miracle of Jesus' ressurection. It falls on the Sunday immediately following Passover.
Because the Passover varies in it's calculation, so does Easter Sunday.
Christmas, President's day, July 4th, and your birthday, all mark a specific event on a specific day (or close to it). Therefore, the day of rememberence never changes.

it's just one of those things. Easter is also a very religious holiday so it makes sense to put it on Sunday. But that is the only holiday where I can really justify why it is on that day. Except Christmas, I know why that's there.

because Jesus was crucified on a Friday and rose from the dead 3 days later. Thanksgiving is always on Thursdays because congress made it that way.
