Too much saturated or unsaturated fat in the diet is unhealthful. What is the difference in the composition of saturated fat and unsaturated fat?

the fats are long chained organic compunds. Unsaturated means that there are a number of double bonds in the structure. Often, these fats will be liquids. When they are fully saturated, the double bonds have been fillled with hydrogen and the structure is now a saturated fat. These fats will be solids. Crisco shortening is a good example of a saturated fat.

Sat fats are needed to make sure the cells membrane that surrounds all your body's cells aren't too fluid. It helps to give the cell membrane structure - aka helps the cell to function well. You are made up of cells => you being alive if they are kept healthy. However a high intake of sat fats over unsat/mono sat can lead to artheroscelrosis which can lead to arteries becoming blocked. Sat fats also accumulate in the body around the stomach in the form of adipose tissue and can affect hormones including how reactive your body is to insulin. You can develop diabetes. Eat a diet high in mono sat fats e.g. Olive oil but if reusing the oil if your naughty enough to eat a lot of fried food use coconut oil. Alrhough it's considered a sat fat it has thermal stability and doesn't oxidize so easily. Oxidation cause free radicals to appear in the body => cell death => you aging/dying faster. Eat plenty of fruit & veg and maybe take a vit C supplement (antioxidant).
