Hello, I eat at a college cafeteria twice a day (lucky me...). Today they were serving Chicken and Dumplings. When i got to the table, I took a bite of dumpling (no chicken, expect for maybe really small pieces in the sauce). My friend got to the table and told me that she didn't get the meal because the dumplings looked pink. Sure enough, I stuck my fork into one and it was slightly pink throughout. I didn't eat any chicken after that, but wihtout thinking, I licked the fork before I threw the food away. I am now having slight stomach pains (but I think they might just be in mind because I am worried). What are the chances of my getting sick? Also, I am going to go eat again in a little while...are there any foods I should avoid right now?

I made a typo above.....the chicken was pink, not the dumplings.

In commercial settings, such as restaurants and school cafeterias, the food is required to be served at specific temperatures to reduce the risk of food borne illness. Additionally, the health department makes frequent visits to places that serve food to the public. This is not to say that there is no chance of getting sick, but the risk is considerably low. I would guess that your stomach is having pains due to your worry and the fact that you threw most of your meal away so you are hungry. No need to avoid any type of food. You will know if you have food poisoning as it causes nausea, vomiting, diarrhea, stomach cramps, some times fever and chills.

Certain pieces of chicken can actually be somewhat pink and yet perfectly safe to eat. It's the internal temperature that matters. Salmonella exhibits symptoms within about 30 minutes. Expect puking and/or diarrhea within an hour (just to be completely safe) if you have salmonella poisoning.

"Pink Meat
The color of cooked chicken is not a sign of its safety. Only by using a food thermometer can one accurately determine that chicken has reached a safe minimum internal temperature of 165 °F throughout. The pink color in safely cooked chicken may be due to the hemoglobin in tissues which can form a heat-stable color. Smoking or grilling may also cause this reaction, which occurs more in young birds." http://www.fsis.usda.gov/Fact_Sheets/Chicken_Food_Safety_Focus/index.asp

I believe most all poultry is inoculated and is handled in a sanitary manner. The restaurants (in this case cafeteria) try their best to bring the temperature to that 160 180F min.

Under cooked chicken is most often the cause of food poisoning. You licked the fork, so you could have a mild case.

Eat only light stuff - tea, toast, applesauce, soup.
