I have two fish that seem to hate each other and one day I looked at one and a piece of the tail was gone. Then about a month later the same fish grew the piece that was missing back. How did this happen?

It's normal, fishes fins are somewhat like out finger nails or hair in that they constantly grow even when damaged or cut off. So a damaged fin will eventually grow back as long as the flesh at the base of the fin isn't damaged too badly.

Fins can be regrown, it also depends on where about the fin was severed, if it was near the base, chances are less likely it will grow back.

I have experience with this when adding some spotted silver dollars to my two ornate polypterus. I thought they would be big enough to not be seen as snacks, woke up one morning and noticed that around half the dorsal fin and a cresent shaped mark was on one of the silver dollars, I removed them to another tank and within 2 weeks, the dorsal had grown back, and the marks were gone.

Fins can regrow as long as the body of the fish where the fins originate aren't damaged.

I had a breeding pair of bullheads where the female bit the male's tail down to bone. The body healed, but he never produced another tail because the area where the tail would grow from was gone.

Healthy fish can regenerate fins quickly.

fish can regenerate there fins , i would be surprised if it is as good as the original. fish cant grow them back if they are bitten to close to the caudal pendical, or to close to the body.
