Do something about osmosis. That doesn't take too long.

Cut a potato, carrot, cucumber, beet, or some other solid plant matter into strips.

Put several strips into different solutions: distilled water, tap water, water with a little salt, water with a lot of salt.

Take the vegetable strips out of the water after 30 minutes and compare their flexibility. You could even trace the outline of the strip showing how much it will bend.

If all the strips have the same shape and measurements, then you could easily compare how much each strip bends after the process.

Here's another suggestion:
Question: Do different seeds expand equally when soaked in water?

Then measure presoaked lengths of various seeds (beans, peas, corn, ...), soak them overnight and measure again in the morning.

Seeds have to absorb water before they begin to grow.

Another idea:
It's pretty simple to check people's reaction time by having them catch a yardstick when you drop it vertically through their hands. You can compare reaction times of:
-- quiet versus music or television on
-- parents versus children
-- before eating versus after eating
-- before reading or working a math prob versus after

Lots of ideas to do with this, and shouldn't take too long, and should be fun.

an easy experiment would be having batteries/cells of different voltages supplying current to a light bulb.
When the battery with the lower voltage is used the light bulb will shine less brightly
When the battery with the higher voltage is used the light bulb will shine more brightly.
you can use a simple circuit to switch between the two batteries.
Your experiment could be about how different voltage supplies affect the output..
You could use a dimmer switch too, and show them how the power supplied decreases as the resistance of the dimmer circuit is increased
