I worked in a restaurant for 12 years, they should refrigerate them, but they don't, anyone can get sick from it being out like that.

It's advisable to store both in the refrigerator after opening. Despite their acidic ingredients, neither is sufficiently acidic to kill bacteria and micro-organisms, including mould, that may be introduced to the containers after opening. Refrigeration does not kill bacteria and micro-organisms either, but does slow the growth. Refrigerated, ketchup should keep for up to 6 months; mustard, 1 year.

Yes, I do restaurants don't put ketchup or mustard in refrigerators, most condiments are always at room temperature since they are not required to refrigerated.

Yes, I do, I know some restaurants puts thier ketchup in the refrigerator, and take them out during business hours, and after hours they put it back.

unopened there is no need to refridgerate. Once it is opened then it should be placed in a fridge to preserve it although it is not required. Restaurants place it in Fridges at night to keep up with code but usually the bags of Ketchup used to refull the containers is left out all the time.

Yes. I guess that most places go through it so fast that it does not have time to sour. I have tasted some ketchup in restaurants that had fermented. That usually happens when they pour the old bottles together. When it looks or smells or tastes questionable, I just ask for a fresh bottle.

Yes, I do. However, if we're having a cookout in which the condiments are all put out for use, I'm not concerned with getting them back in the refrigerator quickly afterwards as I am with the mayo.

Yes, I put them in the refrigerator. Maybe restaurants put them in the refrigerator when they are not open. Only keeping them out when they are open. =)

I always refrigerate condiments. I'm pretty sure that most restaurants do refrigerate after opening them.
