Flowers. Lilies and other spring flowers would be excellent.

Spring flowers, either in a vase or an arrangement, would be nice.
An adult Easter basket, full of gormet Easter candy, would be cute, doesn't have to be big. All the chocolateirs around here make chocolate bunnies, pastel candies. Or if you are on a budget, make your own. Wal-mart is the place to go, candy and baskets are cheap. You said not food related, but chocolate is technically not food, it is manna from heaven.
Other ideas are a wreath, that can be used from year to year, or a sit around thing. The local gift shops are full of cavorting bunnies, decorative eggs, bunny tea pots, bunny deviled egg trays, etc. If you can afford it, go to a high end department store, and pick something out. Our hospital gift shop has some really cute stuff, in all price ranges. Keepsake quality.
It is too late now, but Lennox has beautiful keepsake eggs.

How about a Basket of Flowers, or a Basket with small Items in there, and you and your girlfriend can pick things out that her mother would like, good luck. Happy Easter.

Very thoughtful of you! Wish my young adult grandkids' significant others were, too.
I'd appreciate flowers (cut or in the pot), candy, any little Easter trinket, even a nice card.
Mind you, all my grandkids are very sweet, but the older ones just don't think of these things. When they were younger they would decorate an egg especially for me.

How about a stuffed animal to go along with the flowers, mabey an easter bunny.

The only concern about Easter lillies is that some people are allergic to them, so I'd go with a spring bouquet or a live plant.

I'd take flowers--a nice bouquet of spring flowers or some tulips would be nice. Maybe even some tulips that are already in a pot. That way you don't have to worry about the flowers dieing and she can plant it if she wishes.
