I personally would choose the Paris of the 3. Paris has a bit more personality than the others, and offers a great cafe and the top rated breakfast buffets by visitors. The Aladdin next door is changing over to the new Planet Hollywood, so there'll be a little construction happening - but overall, Paris is by far my fave of the choices.
The Bellagio is fantastic as well, a 5 star hotel with much to offer and lots to see, but you can always visit the Bellagio when staying at the Paris. Of course, price comes into factor here as well, since the Bellagio is also one of the priciest in Las Vegas.
Caesars is great, but a bit overwhelming, if you've never been to Vegas, I would suggest going with something less overwhelming. But while in vegas, make sure to check into the shopping at the Forums and also the restaurants, Spago's by Wolf Gang Puck is here.
The Venetian is wonderful at the same time, I would suggest this as my second choice. The Grand Lux Cafe owned by Cheesecake Factory is a regular visit of mine. My only problem with the Venetian is the parking.
I would also look into the Mandalay Bay, a bit more modern than the others. A beautiful sand beach pool makes Mandalay a favorite. The MGM Grand, if you enjoy partying and spas' - MGM is notorious for great parties and the restaurants here are excellent - Emerils is here and the famed dance club Studio 54.
The Wynn, although it's the newest seems to lack the Vegas Flair. I personally do not like the hotel or the casino and I never recommend it either. Stop in to see it for yourself via a walk on the strip however. But most people I personally know, do not appreciate the wynn and it's rates as well.
Choose your accommodations based on your personality - that would be my advice.

I liked the smaller suites at the palms personally. They are affordable, clean and a very nice view of vegas. They have great night life, always the best during the weekend. If you are a gambler than you might want to try downtown, Like the golden nugget or my favorite the mainstreet station. But out of the three that you listed....to me the bellagio is the best. I stayed there one night and i felt out of place and I take quite a bit of money but not enough to really enjoy myself at the bellagio, but it is very nice and if you have alot to spend the bellagio will take it very fast.

Mandalay Bay is wonderful but the pool is being renovated. You would have to get a complimentary pass to the Luxor's or MGM's pool.
I heard the Venetian doesn't allow any smoking anywhere on it's property now.

If you don't smoke you have to know that most large casinos are filled with smoke. The one with the best ventilation seems to be New York New York.
The worst is the Mirage.
I like the Las Vegas Hilton, but its location is not central. Of the ones you chose, I think Paris is probably best. Good casino. Low ceiling makes it a little smoky though for my taste.

The Palace Hotel and Casino
There are restaurants, shows, and casinos throughout. Just stay on the tower side and not the garden side. There is NO ELEVATOR on the garden side and you have to climb stairs with your luggage.

Go on expedia, and make a fake trip with hotel. They will provide you a list of all hotels and their ratings, and their rates.
