The one where they decide to be friends only, the one where he splits to Africa and writes her a "Dear John" letter, and I think they had at one point decided to date others, but not sure on that, so that's possibly 3, and they got back together twice. Sorry for the long answer, but I loved that show.

They broke up twice. He broke up with her in the finale of season three, in "The Promise Ring" when he got her a promise ring and she refused to wear it.
They got back together in season five's premiere, "Going To California".
He broke up with her again a couple of episodes into season eight by letter when he was in Africa.
But he came back for her in the series finale.
