I've included a link with information on meet and greets with characters. It provides a lot of information based on characters, as well as what characters are in each restuarant, etc. That should be just about all the information you need. A few characters will be in the same place, but are there are different times during the day, for example Buzz Lightyear can be found in front of Buzz Lightyear's Space Ranger Spin. You also have Toontown in Magic Kingdom, where you can go in to see Mickey, Winnie the Pooh and Friends as well as some Princess'.
It is really hard to find some characters and you never know who is going to be where. So, there are a few things you can do to find out who will be where.
When you get to the park, go to Guest Relations and ask them who is supposed to be appearing, they are more than happy to help. They can call and find out everything for you so you know, but remember this could change as well. They can also tell you the best places to go to see the characters.
Of course, you can always ask any cast member and they can help as well.
When you get your Time Guide for the park, they will list both the characters and where they will be located, as well as the time.
Have a great time!

You will see every disney character every created in Magic Kingdom. They are everywhere! Just a note, Disney will have people all around to take pictures of you. They will give you a card that holds all of your photos. Keep this card. The pictures are ridiculously expensive, but if you mess one up with an important character you always have a back up.
As soon as you walked in there will be a circle with Minnie and Mickey. Don't wait in line here if you don't have too. I believe they are located in Toon Town as well. When we saw them there we also saw Goofy, Donald and Daisy. Be aware though they have photographers there. You can take your own pictures, but they will give you a photo card.
Outside of the circle of Minnie and Mickey on the street we saw Wendy (from Peter Pan), Cruella DeVille, Chip & Dale, the Aristocats and others. I couldn't identify them all, my daughter was much better at this than I was.
There is a street (sorry can't remember the name) you have to walk down to get to all the rides. When you are here they will take a picture of your group and superimpose a picture of Tinkerbell in it. I have never purchased these, we always look nuts trying to get Tinkerbell in all our hands.
When you are heading towards the Swiss Family Robinson tree both times we saw Timon and Pumba. By the tea cups were Tweedle Dee and Tweedle Dum. As for princesses we had the dinner with Cinderella (or some such thing) we saw the whole crew of that film, as well as Snow White. The characters are everywhere in the park.
I would highly suggest buying one of the autograph books before you get in (there is small stand on the left we used the second time) or as soon as you get in. The characters sign the books while you take pictures. Then you have the autograph with the picture of your child. We have been two times and both times we ran out of room in the autograph room in the books! I would recommend that you stand in lines for rides you haven't fast passed while someone else stands in line for pics and autographs.
When we were in Animal Kingdom we saw Pochohantas, Stanley, Rollie Polie Ollie and other characters in this museum type building that was right outside the entrance to the petting zoo. We also had pictures of the Lion King crew here.
You will not be at a loss for pictures in either of these parks. I have more pictures with Disney characters than I could possibly need. But they are a lot of fun to look at. I am kind of sad we didn't go this year! We have been the past two! It's so much fun. Make sure you take pics with your favorite characters as well!

The most efficient way to see the characters is to eat in the restaurants where they come out. Otherwise you will end up in long lines to see them. In the restaurants they come out and it is easy to get pictures. The Crystal Palace in Fantasy has a lot of them as does the spinning restaurant on top of the agriculture building in Epcot. Call Disney to book your meal reservations and ask the person booking you which restaurants have the most characters
