If the post office has a mailbox with an 11:00 AM pickup, will my mail be processed any faster than if I drop it in a mailbox with a 3:00 PM pickup, or just put it in the mailbox at the curb?

Great question!
In most towns/cities there are multiple times during the day that mail gets dispatched. If you do have a mailbox to drop it off with an 11:00AM pick up it should leave town sooner than dropping at a mailbox with a later pick-up time.
Normally all mail deposited at the Post Office or a collection box before the last pick-up time WILL be dispatched that day.

The mail leaves the post office at a certain time. If you take it to the post office before that time, you will be sure of it leaving that day. If you wait for the 3:00 pickup, you might not get it on that same truck out.
