It is because the Beatles are considered to be the best group
ever, apparently and other musicians want to be compared to the Beatles so they cover their songs. Yes I do think their songs should be left alone.

McCartney CO-WROTE most of the excellent pop of the 60s and a few respectable songs interior the early 70s yet has executed no longer something that folk could prefer to take into their lives for 30 years...whilst bands conceal the Beatles they are fairly saluting the genius of Lennon

probably because the beatles were a big influence on so many different artists, & they want to do their own interpretations of the songs as a tribute to them...

The same reason you see all the horrible remakes of movie classics, lack of originality. Its an easy buck.
