Because the chemical reaction turning the burned stuff (like CH2O or similar) and oxygen (O2) into carbon dioxide (CO2) and water (H2O) releases lots of heat. The energy was put into the chemical bonds in the first place by plants, who got the energy from the sun, which generated it via nuclear fusion.
