My son has signed two contracts for employment and only wants one of the jobs will it be a problem to cancel?

No, just write a letter explaining that he has taken alternative employment and that the contract is cancelled before it comes into effect.

You or your son need to read the contract carefully - any penalties for breaking the contract should be detailed in the
document he signed.
