For your gold fish the vent (their butt) for females is convex (sticks out) and for males concave (Sunken in)
As for the Pleco, looking at the genitals and usual looking at the body roundness + the thickness of the pectorial finns and the numbers of spiny outgrowths on the body (Odontales) is the best wayto tell.

Sexing those species is difficult, mostly the shape of the fins is the best indicator. Find websites that deal with each individual specie and start searching there. The real answer is years of experience and study. Sorry,but there ain't no easy way.----PeeTee

It's hard to determine either outside of breeding seasons.
The goldfish males will develop tubercles (like little pimples) on the gill covers and along the front edges of their pectoral fins: http://www.bristol-aquarists.org.uk/goldfish/info/sexing-fs.htm

I think the male plecos have a wang... you can check when they're on the glass.
goldfish, it's really hard to tell...

I'm not sure how to sex plecos, I think the only way is by their size, females should be wider.
