They could be in sales or retail. "Out in the field" means they have a territory to cover and they have to drive around to different locations to conduct their business.

That can cover any number of positions. Some people have home offices where the paper work transpires and the meetings are held and the work load dispersed.

Then the other part of their job might be for example, an insurance adjuster going out in the field to a home that was damaged by fire, or storm or whatever.

An architect is another good example. They draw up schematics, get them approved by the client, and need to be on site with the construction crew to oversee the job.

Probably some sort of sales agent. Like a real estate agent. They call it "the field" when you go out and show homes. And of course they have to have an office to do their paperwork. There are many jobs that require driving in your car from house to house or business to business that this could apply to.

it could be many things

my dad is a real estate appraiser
he spends a lot of time in his office, and when he inspects a property, he is technically doing "field" work as they refer to it

but there are many many many other things it could be
it could literally be in a field (crops) or they could be using field to refer to something like "field" work
