I'm not a dr but I can answer about the color of the blood when the stain is dried. The blood stain will turn brown when it is dry. Brown blood is old blood.

To get it out of the sheet soak it in cold water for a bit as well as try either something like Spray and Wash or hydrogen peroxide.

As for the color coming out of our body, when I have to change pads for my period the blood still remains red.

Well it is possible for blood to retain a fresh red colour but i doubt it would remain that way for long on your sheets. in EDTA(anti clotting agent) tubes it tends to retain the colour it was originally and may stay that way for as long as a week nva kept it longer then that usually sent it off to the lab for analysis.
to answer your second question it would be forever as u have not defined how red is red...blood that i have kept on gauze for a period of 3 years is still red in colour tho dark almost brownish. from my 1st tattoo.
cheers
