I live in Texas too. And I just planted Zoysia grass, it says you shouldn't mow until one month after the day of planting. And you should water it everday for 3 weeks. And after that, according to weather water it accordingly. Some say fertilizing helps it and improvees teh color of the grass. Witht he zoysia it says you dont need to fertilize once it covers the entire yard. The say to use NURTI-20 fertilizer. You can walk on it as soon as you like, just dont play around on it and such. Just a casual walk to water and what not is fine. But no picking it up isnt fine, because it is trying to take root to your ground, and if you pull on it, then you are ripping up the tiny little roots. And here is Texas with our summer droughts, I would water atleast once a day during the hot times around 5 in the morning. I suggest getting a timed water sprinkler.

you can walk on right away to put on sprinklers or root promoting fertilizers(second and third number are the ones you pay attention to) and water it deep . Just ask the garden center.
Don't pick it up. Once laid that should be its final place so the roots go into the ground below to tie the sod down to become a regular lawn.water every second or third day and give it 2 weeks before cutting it...on your no watering day. Should be good.

I would give it about one month before mowing. Walking on it is fine. DO NOT pick it up... it is trying to mate with the ground below and that is the most important thing. Water often... preferably in the morning.

3 weeks, three times a day for the first week, then 2 X a day for the second week and then set your sprinklers for once a day... about 5 minutes each watering... adjust to weather
