I've heard 'Cinderella Man' and 'Rocky' mentioned as a film that depicts a comeback but are there any true stories (non-sports preferably) that tell a truly inspiring story about coming back when the chips are down? Overcoming injuries, setbacks, etc?

The obvious right now would be 'The Pursuit of Happyness'.
I'd keep an eye out on the new film 'Peaceful Warrior' though... If it holds up to its promise, then it will be really inspiring. It was release again last weekend.
For old school, you can't beat Superman's 'return' at the end of Superman II when he get his powers back and goes back to that diner and kicks that guys butt! That was a good comeback, but probally not what you meant. :-)

hands down, it is Peaceful Warrior
amazing, true story about a gymnast who is seriosly injured in a motorcycle accident, yet comes back to win an NCAA tournament
awesome and inspiring!
