Sharp, mature cheddar, sometimes an idgy bit of stilton on crackers and Primula spread cheese...ace on toast! And I love cottage cheese...

I like soft cheese mixed with chocolate, 2 eggs, 1/2 cup of sugar put into a tray; baked for 20 minutes and left in the fridge to stand - wait, isn't that a cheesecake receipt =P
Btw I made that today, they are delicious!

Feta or Mozzarella. But if it is feta, it has to be a certain brand. I think the brand I like is called Athenos or something like that. I forget, I haven't had it in a while. I like to get a solid block of it and just chip away at it with a knife. Pretty much any type of Mozzarella is OK with me. Yum, yum, cheese!
