I don't do either. When I first start out I hold the knob because I have to shift quite a bit, but once I get to 4th or 5th gear i usually have one arm on the wheel and one not.

A good driver should keep both hands on the wheel except when changing gear. There is another consideration though. If you constantly keep your hand on the gear knob you will start to put some strain on the gearbox which will wear the 'dogs' so avoid it if you can.

Both hands on the wheel. Putting even the lightest pressure on the knob I mean gear lever can wear the synchromesh in the box prematurely
AND
You are not in full control of your car if you drive one handed and for those of you who think you are you are wrong as they would have taught you one handed driving on your lessions and test
SO to recap
1 Keep your hands off the knob
2 Don't wear out your box
3 Do nothing to encourage anything premature
Got It

Are we talking Manual or Automatic....or just in general?
I personally tend to hold the gearshift more than both hands on the wheel....but I drive a stick and change gears a lot.

i usually drive with my right hand on steering wheel and left hand on my left knee, sometimes but rarely on the gear stick.
I heard once that it's bad for the gear box in some cars to drive with hand on knob(applying weight)
