Dyes are water solutions. Dyeing gets the dye from the solution onto the egg surface. It's good to dye asmany eggsaspossible or to dye as deeply as possible so not to waste dye.

Dye kits advise adding a spoonful of vinegar to the dye bath. Egg shells are calcium carbonate, CaCO3. Vinegar is 5% acetic acid, CH3COOH, solution. The acetic acid roughens the egg surface so the dye molecules interact better with Ca++ and CO3= at the surface.

It's hard to say more, because dye kits don't say what the dyes are. But you might be able to find more about dyeing with berries (anthocyanins, phenolic -OH groups) and onion skins.

Eggs are denser than water, so they sink in the dye bath. Consider what would happen were that not so LOL.

THAT... is weird. It's a good idea to use that for it. I would stick to stuff I didn't actually wear, like curtains or blankets or whatever, due to the possibility of stench like the other user mentioned.... PTA and Easter Eggs. Who woulda thunk it?
