Other than erosion (a constant and pervasive process), water hydrates other things. We could not exist without it, seeing as how we are about 70% water. If we don't have enough we become dehydrated (logical). Same with plants, the basis of most food chains on earth. Not enough and they lose turgor pressure; we call it "wilting." It is also a lubricant, solvent, and transportation system.
