A hollow log is a great hiding place for them. So is a broken peice of a flower pot (be sure it's unglazed though). Rams will develop more color as they settle into a new environment and as they mature. Good water quality and a varied diet of quality foods will also go a long way to nice coloration. Of course, when they breed colors really pop out.

Any fish love to hide in stuff but yes it will make your fish happy to have stuff to hide in, about the colors of the fish, if your tank is healthy it will promote color enhacment for the fish and certain types of food will too. another thing is the lighting is a important factor with fish, just call your local pet store and let them know what fish you have and ask them what is the best lighting to put there

hope this helps
