My Daughter did a project on Coral Bleaching as part of environmental awareness.
It started off with asking the question.
"I will keep the answer brief"
What is Coral Bleaching? Microscopic plants that live within the coral die because the sea temperature rises.
The next question in the project was.
What causes the sea temperature to rise? Again keeping the answer brief.
Answer: Global warming. Also known as ( The Greenhouse Effect)
The most important question is.
How can we if this?
Now this is the part that your 7 to 10 years old come in.
The answer is:
1. Walk to school instead of driving. (Reason; reduce carbon dioxide into the air)
2. Plant more trees. Trees absorb carbon dioxide. “Get them to plant trees”
3. Turn of lights. “Get them to become light police” It can become there chance to fine there parents for leaving the lights on.
4. Recycling. Have three pins. One for bottles. One for paper and the other for normal rubbish. Make sure they are in charge of the bins.

Tricky. Most won't grasp the abstracts of things like "global warming"--and things like "An Inconvenient Truth" might jsut scare them if not presented carefully.
I'd focus on small scale examples. For example, here's an "experiment" you might try with them. Pretty much all children have seen gasoline spots on their driveways, etc--so that's a starting point they can understand. Next, get a couple of (cheap but healthy) plants. Take one and water ithem properly, etc. Take the other and pour some gasoline into the pot. As you know, in a couple of days the plant will die.
You can think up other ways of showing children that age what can happen when the environment becomes contaminated. But--whatever example you chooose, it should be able to let them see--in a way they can grasp--what all the abstract words mean in actual fact.

Doing something they don't like is pointless as they will associate environmental awareness with things they can't stand. You want this to be a positive experience. Take them on a hike on an easy trail. When you go, bring binoculars if you have them to look at birds. Bring a little sketch pad to draw pictures (they dont have to be great drawings) of what your kids like. The sketch pad is good in other ways too. You can keep track of what you see in list form and you can pick up leaves to identify later. Turn it into a game trying to find as many leaves as you can. If you see trash on your hike, make a point of picking it up. Bring a trash bag and work gloves with you so that you don't have to carry gross stuff in your pockets. Once you have done this you can explain how trails like the one you are on can be ruined by people not taking care of them. Explain how the animals are hurt by human trash. An easy example is the plastic holder that coke cans come in. That little piece of plastic is not only an eye-sore, but also a very dangerous thing for birds and small animals. They get caught in them and choke. See the movie Happy Feet with your kids. It's not the greatest movie, but it touches on environmental issues in a way that kids can understand. It even has a penguin who has the plastic thing caught around his neck. Combine hiking with watching a movie like that or Fern Gully and your kids are sure to start picking up on being aware of the environment.

Find out if you have an Ecology Action Center in youyr area that could come talk to the kids about recycling etc. One fun project is to make paper out of old paper or even old jeans. In our school the rooms all have a barrel for paper that isnt being used and it is all collected and recycled down the road at our recycling bin. We do t lunchrooms ame way there is a bag for cans, plastic that can be recycled, paper and then a trash bin. They use the food leftovers to make compost.

Maybe go on a field trip or something to a nature place. A local bog, or a state park with a park ranger on hand as a tour guide. He or she could raise the awareness of problems with our declining environment. The kids of today are going to be our future, and if they're not aware of what's happening, they won't be invovled in being a solution. Oh, a trip to a zoo with a rainforest could be fun also. Zoos are very informative.

Something they won't like, but....clean up any trash around the school buildings and grounds.
Plants can't grow if junk is piled on top of them or rain and sun can't get to them.
In the same way, kids can't feel good about going to school or feel proud of their school if there is trash all around it.
