Prejudice, because it is much more harmful and more difficult to over-come.
Sarcasm can be very ugly, but it can also be used in a humorous manner. I would imagine that it would be much easier to over-come the tendency to be sarcastic then to over-come prejudice.

Oooh! A tough question.
To prejudge is to shut oneself of to the possibilities that you might be wrong.
Sarcasm shuts on off to the possibility that people might take you literally.
Hmmm.
I would rather be a person who people hated for saying something wrong than a person that people hated for hating others. At least that way all the hatred is on their side of the equation. Sarcasm is meant to be witty and humorous. Prejudice is just meant to be decisive. Not all decisions need to be made.
