Kare Kare from my mom's recipe book
Ingredients:
1 Kilo Oxtail
0.5 Kilo Ox Intestine
0.5 kilo Ox Tripe
0.25 kilo peanut butter (unsweetened)
1 cup powdered rice
1 tsp. atsuete for coloring
4 cloves garlic
2 pcs onion
2 tsp. pepper
veggies like eggplant, pechay, stringbeans
Boil oxtail and tripe & intestine (before boiling intestine, tie both end so not to scatter the inside fat (firstboiling for about 15 min).
rinse a flowing water.
Boil it again in water with pepper, onion and a pinch of salt until tender (ofcourse check once in while, they have different cooking time. reserve water.
saute garlic, onion, and meat, add salt and ground peper, add the water used for boiling meat. in one bowl, dissolve peanut butter and rice powder. add in then in one cup, put atsuete and add hot water. pour in the colored water (not the atuete seed). season it with salt if desire.
serve with bagoong.

Your better off using Mama Sita's Kare-Kare mix. All you have to do is buy the Ox-Tail, boil it for a good 6 hours (for an awesome tenderness), add that mix, then add about 2 tablespoons of peanut butter, however much string beans you want & bukkchoy. Add however much salt you want for taste or you can just eat it with Bagoong. That's it! it's so easy & delicious. BTW, Mama Sita's Kare-Kare mix is sold at any Asian/Filipino food market or 99 Ranch Market.

I copied this from Mama Sita's website. I always buy a Mama Sita mix (from the Filipino store) if I want to make KareKare. I just add 1/4 cup of peanut butter to the mix. It takes a lot of time (3 hours maybe) to boil the oxtails at first but the rest is easy.
INGREDIENTS
3 cups Buntot ng baka (oxtail), cleaned and cut into serving pieces
8 cups Water
1 tsp Garlic, crushed
1 pc Onion, sliced
1 tbsp Cooking oil
1 pouch Mama Sita’s Kare-kare (Peanut Sauce) Mix, dissolved in:
1 cup Water
1 cup Eggplant, cut diagonally about ¼ inch thick
1 cup Sitaw (long green beans), cut into 2 inches lengths
1 bundle Pechay (bok choy)
½ cup Bagoong alamang (sautéed shrimp)
COOKING INSTRUCTIONS
Boil oxtail in 8 cups and simmer until meat is tender leaving about 1 ½ cups (375 ml) stock. Set aside.
Sauté garlic and onion in oil. Add oxtail and Mama Sita’s Kare-kare (Peanut Sauce) Mix. Add the remaining stock. Stir and simmer for two minutes.
Add eggplant and string beans. Simmer for three minutes. Stir once in a while to prevent the sauce from sticking to the pan.
Add pechay and simmer for two minutes or until the vegetables are done.
Serve with Bagoong Alamang. (optional)
VARIATION: Pressure cook ½ kg oxtail for 45 minutes to one hour with 3-4 cups water.
