I've seen 8 year old girls beat the pants off adults in some of the most complicated of games. But if I would choose three that they would enjoy, I'd go with Ticket to Ride, Blokus and Settlers of Catan.
Ticket to Ride (http://www.boardgamegeek.com/game/9209) is an easy to learn game where you build train routes across the United States. It'll teach them geography and planning. Very good game.
Blokus (http://www.boardgamegeek.com/game/2453) is a game I taught my 4 year old. 8-12 and they can learn some of the strategies. It's an abstract game where you place Tetris-like pieces on a grid and try to block the other players from laying down their tiles.
Settlers of Catan (http://www.boardgamegeek.com/game/13) is more complex than the other two, however it's extremely rewarding. A series of hexes display different types of land where the players get resources such as brick and stone from the land. They use these resources (5 in total) to build settlements and cities. The more you build, the more points you get. 8 year olds can handle it, I've been beaten by them before!

Sorry and other games now come themed. I've seen Barbie and Polly Pocket versions.

They have really cool Disney versions of Scrabble and Sorry and the like. My 8 year old nieces absolutely love them, and they are also great for adults to play along with them. It very much stimulates their minds, so that's always a bonus!
You can get them fairly cheap at Target, Wal-Mart, or even amazon.com.

well... I'm 11 and I love chess. Try monopoly or CHESS . My personal favourite is risk but none of my sisters have agreed to play it. Life is good too.
