It's a player who's able to (and usually does) play several positions. It gives teams substitution options at multiple positions without wasting multiple roster slots.
If your talking about the Util position in Yahoo's Fantasy Baseball, then it's just a slot that can be used by any batter.

A player who doesn't start but becuase he can play many positions, can come off the bench. A player does not boost about being a utility player becuase he doesn't start often or he is shifted arround and cannot play one position all the time.
In fantasy baseball, the term is slightly different in that it can mean a player who can play any position or does not have enough time to qualify for one position (often DH's are put in the catigory becuase only half of baseball uses the DH).

A utility player is someone who can play different positions usually thye can play outfield and infield positions. So if one of your players gets hurt you can use your utility player to replace him.Chone Figgins of the Angels is an example of a good utility player.

in baseball, it is a player who can play a wide variety of positions. Teams can use this player as backup for many positions to save money/spots.
In fantasy, it is someone who you start as a player but not assigned to a specific position.

A utility player is a guy who (typically) comes off the bench and gives you great innings at many different positions. Such as Ryan Freel (Reds) who plays CF, RF, LF, pinch runs, and does a little bit of everything. Or Mark Loretta (Astros) who can play 3B, SS, 2B, and 1B well. My last example is Chone Figgins (Angels), he plays LF, RF, CF, 3B, 2B, and even some SS...he has started at every position in the majors except C and SP. Also typically they are guys who give 100% of heart and they are the ones who have dirty uniforms at the end of every single game somehow some way...just great hustle guys.

for fantasy baseball:
a utility player is any offensive player
i.e. if you have 2 1st baseman playing that day, you can make one of them y our starting 1st baseman, and the other one could be one of your utility players
you can put anyone that bats (non pitchers, i.e. the National League) as a utility player
-------------------------------------------------------
for regular baseball:
it is any field player that is usually a non-starter
a typical utility player is someone that can play multiple positions (most commonly infield, but can also be found as outfield players).
some examples are:
alex cora (red sox)
miguel cairo (yankees)

It is a player who can play many positions. Such as the Mariners' Willie Bloomquist who can play 3rd Base, Shortstop, 2nd Base, and all 3 outfield positions.
Hope that answers your question.
