Why is the mill so important in medieval society?

Because the mill grinds the grain, allowing the women (who do ALL the cooking) to make breads, etc.
A VERY central part of life then..and now...if you think about it

the question is, why do people eat white flour products when the only reason they take all the nutrients out of it to make it white is so the rats want eat it. but we do?they lost a lot of flour and meal to rats ,then they made it white and they want eat it
