If I want to get into the physician assistant program (at the University of Colorado @Denver), I need a baccalaureates degree.

That same school (University of Colorado @Denver) offers a baccalaureates degree.

Are my chances higher with a BS degree of them?

I could see this going either way. If I were you I would contact that school and ask them how that is viewed.

On the one hand, they should know the academic rigor of their undergrad programs as opposed to those in other schools. On the other, familiarity can breed contempt, and other schools may be of higher stature in their minds.

At most schools, though, the GPA number will mean more than anything else, whether earned there or elsewhere.
