The original meaning of the iPrefix was internet, but not for the iMac. It was for InfoGear's iPhone product (which led to a recent lawsuit against Apple by Cisco, who acquired the iPhone trademark by buying InfoGear a few years back. The original iPhone was basically the same type of thing that you get with Vonage and other VoIP products, but it never really took off. Apple's original use, for the iMac (which arrived about a year later) was also for internet, since the iMac wasn't really usable for much other than an internet box (no floppy drive and a ROM-only CD drive meant that the only way to save files to any sort of portable media would involve having to do so through the USB1 ports, and USB flash drives would not actually hit the market for another year).
It's not an Apple-specific thing, but due in large part to the success of the iPod (and by extension, the iMac that it was named for), it has become permanently associated with the Apple company in the minds of the general public.

This is an open question that really has no specific and firm answer.
At first, Steve Jobs hinted, when he introduced the very first G3 based iMac, that the i stood for internet ready. Since then he backpedaled on that meaning, and to this day, it is merely a consumer model designation.

The "i" replaced into meant to be Apple-unique, yet yet another agency (can not undergo in techniques which one) delivered a lawsuit and the companies have agreed to "share" the "i." i think of it stands for "person?"
