This doesn't happen until it reaches 75 degrees outside. Then while driving down the road in town or on the highway it just dies. Sometimes you have to stop and wait and sometimes you can turn it on and keep going. What should I have checked out on it?

Yup. Ignition module.

They are common issues with GM.
$36.00 and fairly easily replaced.

They're mounted to the mechanical advance plate under the distributor cap.

The ECM - the electronic control module - it has a computer chip that may be malfunctioning. If it is, it'll have to be replaced. They're not free by any means, but if that thing dies on you on the freeway, it could cost you your life - and those of your passengers and maybe even those of whomever's in the vehicle that hits yours. So the price of a replacement is well worth it. You'll never purchase cheaper insurance!

Ignition. Check your pickup coil (ignition module), and a good time to raplace the coil. replacing it with a high energy (MSD, or accel if you have to) gives you better response anyway. Check the wires for leaking, make sure your spark plugs arent fouling (although I doubt thats the issue) Fuel pump relay and pressure regulator are known issues in forums about your car... If your ignition is not to blame, you may want to start there

gm has a problem with the ignition module getting over heated and causing premature failure, while your replacing the ignition module you might as well replace the coil too

a typical if it has 60k or more its time for a new alternator and possibly the battery .most auto parts stores will check the charging system for free .mine did the same thing get the lifetime alternator if you plan to keep the vehicle if not get the one year the only difference is the price
