What is a simple, yet yummy Easter dinner to prepare? And please no ham reciepes, I'm Jewish, but making an Easter dinner for my friends on Sunday.

Instead of ham you could have Lamb. But I don't know how to prepare lamb...so I would just go with anything you like to cook and are good at and comfortable with, then make it somewhat Easter-ish with your table decor (maybe a basket with some colored eggs) and dessert. Have something with eggs - maybe even a brunch menu with quiche.

I'm making a standing rib roast instead of ham this year. I got the recipe from our local grocery store.. Publix. It was very easy to make. It's a little pricy, but it was awesome. I'm sure you can get the recipe on their website.
