Unfortunately ther aren't any really signs to clue you in on the exact time. A fish that is "squared off" around the back of her belly and is hiding a lot is probably due any time, but that can still leave a lot of guess work and a pretty wide margin of error. To be honest it's as much luck as anything to catch the event.

Back when I used to keep freshwater, I had guppies and watched them giving birth a couple of times. Unfortunately there are no real signs (i.e. no change in swimming patterns or movements) that I am aware of to indicate when it is going to start. My best advice would be to keep checking the tank and after you notice the first baby, keep your eyes focused on the pregnant guppy and don't take your eyes off of her. In my experiences, the babies all came out of the mother's mouth within a 15 minute time frame.
I know this isn't really scientific advice, but it's tough to see it as it happens. I've had guppies give birth 8 times, but I only saw it happen twice. Good luck!

I used to have guppies, if you want to wait and watch them you don't have to. you'll need a plastic breeder net that separates the female guppy/ies from the babies, you just put the female/s in the top and the babies will roll down to the bottom where she cannot get them ,you can get these at the pet stores for pretty cheap. this will save you A LOT of trouble, believe me. otherwise you will have to catch the babies with a fish net, this takes time, and it gets very frustrating, Without them a lot of the babies will not survive but get ate by the other guppies in the tank, and you could witness this happening and its very sad, it happens almost immediately when the female starts giving birth.

i got my guppies from petsmart then about 2 hours later 1 was giving borth, it was hidding in the plants when the baby would come out then after it would swim around then sink to the bottom and start gasping like crazy the baby pops out like a little ball then the mom swims around alittle more, it's preaty cool watching it, it get boring after the 10 guppy though, my guppy had 24!:D

usually occurs at night, but i have seen them deliver, ya better get moma away from them quick cause she loves them so much she'll eat them..........
