For home use, I don't see much of a difference. If you were using it as a tool in your job, I would get the chromium steel. I don't feel that stainless holds an edge as well. Professionals have their cutlery sharpened quite often.

We use stainless table cutlery, but this is just something for you to think about. If you had to worry about everything, you couldn't breathe. Since this is something you would use everyday, ask an expert to be on the safe side.
