Convection ovens/fan ovens heat air that is then circulated in the oven by an embedded high temperature fan.

By moving heated air past the food, convection ovens can operate at a lower temperature than a standard conventional oven and they can cook food more quickly. A convection oven uses convection currents to heat the food. Convection ovens also generally do not have "hot spots" and thus bake more evenly.

A conventional oven produces heat from just a heat element. A convection oven produces heat from a heat element and also uses a fan to circulate the heat so your food gets cooked evenly and much faster. I have a Flavour Flo convection oven and its awesome!

Conventional ovens are becoming obsolete. Convections are now the standard in new home build choices. They also have a convection conversion feature to help make the right temperature choice as recipes are still using conventional temps. My new microwave is a microwave/convection as well.

Lots of us know. Conventional is radiant heat, convection employs air flow as well as radiant heat to cook. Convection ovens are usually used in commercial aplications rather than home use.

a conventional oven just heats up to a certain degree. the convectional oven works with heat and a ventilator that disperses the heat evenly in the oven and assures you a steady even heat all over.

One uses gas the other electricity the gas is best for baking!
