Since they already accepted you, they probably just want to make sure that you are consistent. They probably don’t want you to think since you are accepted, you can slack off and quite trying. I wouldn’t worry about it too much.
And if your really worried, you can always ask. Though I really think what I stated above is the case, they may be looking for something in particular. In fact asking could work in your favor, it shows that you are really looking forward to attending there school, and want to do whatever it takes to get in.

NYU, like other schools, are not looking for a specific GPA. They are looking for red flags that show you've been slacking off: an A grade that becomes a D, that you've dropped an honor's class to take study hall, etc. As long as your grades haven't taken a MAJOR dip (a few C's shouldn't matter--they know, after all, that you're human), you should be fine.
But each school is different.
I do not recommend calling and asking unless you can remain anonymous. If you tell them who you are, you will be drawing unwanted attention to yourself--they may decide that since you're asking, you're worth investigating.

I go to NYU and so long as your grades don't drop more than one letter grade since your application the don't care at all.
Also, if they don't like your grades they'll only put you on academic probation unless you're failing just about every class.
NYU has a reputation as a bunch of smart people but if you go here you'll find it's really just a bunch of diverse loveable people with a wide variety of intelligence. (The smart kids are geniuses but I've met some real morons.)

Since you already have the admission letter I would advice you to try and get a much better score than your own previous score, this will show them that you are improving. And, do try to get as high as possible.

1.1 if you are not using any tylenol to boost your scores. They test the paper from your transcripts for acetominophen residue.
