(8-1)!=7*6*5*4*3*2=5040 assuming the factorial thing is right.

There's an unlimited number. For simple order of position, you have 8!, which would be 40,320, but when you consider all the other possible variables, such as each individual facing the table or away from it, sitting on the floor, a chair, or a stool, and if you don't assume there are just eight fixed positions, you really get into some heavy numbers.
