My mom has a little above normal insulin levels..

we would like to find out what an appropriate diet would be, to help level out this level. We are aware that carbohydrate intake should be lowered, but what other things can be done??

please help!!

Cut out simple carbs like sugar, cereals, white bread, white flours, white rice, alcohol. Add complex carbs like brown rice, whole grains, beans, etc. Eat enough protein for her body weight and eat lots of dark colored vegetables, and limited fruits. Never skip breakfast.

When it comes to diet, please do talk to a dietitian first - but before she goes to the doctor, I would recommend that

1) research if the glycemic diet would be agreeable to your mom...
2)Also read more about some food complements like chromium, gymnema silvestre, vitamin D and the possibility increase the intake of fish oil (if not allergic to it.).
3)Increase the soluble fiber in her diet,
4)substitute the sugar for a comparable sweetener(have you heard about stevia?)
5)use more whole grains and
6)a good trick that is very tasty: sprinkle cinnamon in almost every thing and lemon juice for flavoring from the salads to water.
7) keep a diary of at least two weeks before the visit
8)take the 10 recipes of food your mother cannot live without so the dietitian or a nutritionist can come up with a light version of it...

Please do keep a close eye on any different body
functions, mood swings, tiredness level, thirst and write it down...

Ask not only for blood work but, liver and kidney function and update this information as much as possible to detect any possible change and avoid further complications.

High insulin levels could mean that she's insulin resistant. Cutting out high starched foods such as white rice and white potatoes could be helpful as well.

Exercise can also help.
