What would cause the clutch to suddenly stop working in my 2004 Chevy Colorado?

There was no previous slipping and it was never hard to shift I was told it is probably the slave cylinder

if pedal suddenly became so soft, it may be clutch cable, replace it. If you hear a crack noise then the cluch may need to be replaced or the release bearings

Between changing gears while driving?

I'd have to say your clutch blew up.

that would be my guess.. or something cut the line.
check the fluid
