Lithium (Li), Sodium (Na) and Potassium (K) all react with water, and can be cut by a knife. There is also Caesium, Rubidium and Francium that react with water (very very violently) however i do not know if these can be cut. They are the alkaline metals and make up group 1 on the periodic table of elements.

Don't forget about Lithium..

A lot of the first group elements are soft and react violently with water.

I once threw 1kg of sodium into a swimming-pool sized body of water just to get rid of it.
