Great book for you to look into (see if the library has it, or buy it-it's a great resource) Advanced Sports Nutrition. I believe Dan B..... wrote it. (I can't spell his last name off the top of my head) I own the book, but don't have it nearby at the moment. Also, Nancy Clark it considered the top person in Sports Nutrition, so see if you can get one of her books!

okay... ive had a lottt of experience with this
you should have a big meal two to three hours before the meet (eggs and juice is good), also, try to eat some carbs.
Then around an hour before the meet, you should have some sort of fruit and protein (i usually have a banana with peanut butter). Try not to over eat, and drink a lot (try not just water: i usually mix gatorade and water, that works well). There is a lot of stuff online where you can find the right foods to eat before a swim meet... for example, i just found this one: http://www.wikihow.com/Prepare-Yourself-for-a-Swim-Meet
hope this helps!!!!

if anything, eat simple carbs, like fruit. also, drink water, or other fluids. make sure NOT to eat anything 1/2 hour before your race. here's why:

when you eat something, in order to digest the food, blood goes to your stomach to break it down. so, it chills there for a half hour. if you're swimming, you want the blood throughout the body, not hanging out with the stomach, cuz then you dont get enough oxegen, and lactic acid will also build up, making you more tired.

I usually try not to eat too much before a race, because if i do, I get sick :( If I have to eat anything, it would be something like hard pretzels, goldfish crackers, or an apple or orange, and definately gatorade... something to pump up my blood glucose to give my body something to work off of.

Those items eaten within an hour or swimming (or an exersise for that matter) will have no positive effect. The only possible effect would be negative if it upsets your stomach or nuetral if it has no effect.

you don't want to eat to much but you do need to eat something that will stick with you through the entire race so you don't burn out so fast also you want to keep drinking liquids like dluted gatorade (half water and gatorade it is better for you) i hope that answers your question
